A darker kernel fetches a lower price. It should not — in our experience the amber kernel is the better-tasting one.
The darkest grade needs particularly careful handling during processing. We sort it by hand to separate the kernels that taste of something from the ones that do not; there is no machine that does this.
If you are ordering for the first time, ask us for a mix with pale kernels and judge for yourself.
